The next batch of Sunora Bacanora is underway!
We purchased these 6600 lbs of piñas on June 5, 2021. These Agave Pacifica piñas were freshly harvested and will be cooked in underground ovens by our master distiller. They are then processed and turned into our Double-Gold, award winning Sunora Bacanora.
The amount of Sunora Bacanora produced from this batch depends on the sugar content of the piñas. Each piña weighs between 12 and 120 lbs. The smaller ones are cooked whole while the larger ones are split into sections because they are so heavy. These are very dense plants and are deprived of water for the last six months so as to concentrate the sugars. In the wild, the agave Pacifica plants that produce these depend on nature for water. It only rains in July, August, and September. They are succulents and as such can survive long periods without water.
